I am the mom that is paranoid about germs…I carry hand-sanitizer everywhere, I make everyone in my house washes their hands frequently, and we all have received our flu shots.  And you know what?  Someone still manages to get sick every cold and flu season.

I guess it’s just a fact of life…so I figure if I can’t prevent it, I can at least be prepared and tackle it head on!  I stock up on Kleenex at Target and I’m armed with the ingredients for my favorite comfort food:  Matzo Ball Chicken Noodle Soup!

I figured there would be no harm in training Mabel to be my little nurse if I’m the one that gets sick too.  😉  Lol!  I have year round allergies so I guess she’s seen me grab a million Kleenex tissues and she helps out when she can.

And a heads up!  There is a great coupon for $1 off any Kleenex 4 pack or larger at Target here.  I’m all about saving money anywhere I can this time of year!

But even if you have a little helper to get you through being sick, you need some quality comfort food to get you back up and going too!  My mom would always make this Matzo Ball Chicken Noodle Soup during winter so it’s the perfect tradition to carry on in my house, especially now that I’m a mom too.

The great thing about this recipe is that it makes a lot of Matzo balls…the best part!

Matzo Ball Chicken Noodle Soup

Ingredients

  • 1 Box (4.5 oz.) of Manischewitz Matzo Ball & Soup Mix (Contains a soup flavoring mix packet, and a motza ball mix packet)
  • 1 Box (5 oz.) of Manischewitz Matzo Ball Mix (Contains 2 packets. You will only use one of these packets)
  • 1 lb. of boneless chicken breasts (cooked and diced)
  • 4 large carrots (cut or sliced any way you prefer)
  • 1 Bag (12 oz.) of fine Egg Noodles (I prefer fine egg noodles. However, any style noodle will work).
  • 4 Eggs
  • 4 Tablespoons Vegetable Oil

Directions

  1. Fill a large soup pot with 3 quarts of water and add sliced carrots and Soup Mix Packet (the clear packet) from the Manischewitz Matzo Ball & Soup Mix box (the other packet will be used later).  Cover and bring to a boil then reduce heat to a simmer. Cook until carrots are just tender. Cooking time will vary depending on how thick or thin you slice your carrots.
  2. Add cooked diced chicken and continue to simmer.
  3. In a medium bowl, add 4 eggs and 4 Tablespoons of Vegetable oil and whisk together. Add Packet #1 from the Manischewitz Matzo Ball & Soup Mix box AND one packet of matzo ball mix from the Manischewitz Matzo Ball Mix box. Stir with a fork until just evenly mixed (do not over mix).
  4. Place bowl in the refrigerator for at least 15 minutes. You want this mixture to be firm when you begin to form your matzo balls.
  5. Bring soup to a boil. Wet your hands and form chilled matzo mixture into 1” balls. Mixture will be sticky. Drop balls into boiling soup. Cover tightly, reduce heat, and simmer for 20 minutes. No peeking.
  6. When matzo balls are done, move them gently with a spoon and add 8 oz. of egg noodles to the simmering pot. Gently stir occasionally and continue to cook until noodles are done. Serve and enjoy.
