Russian Tea Cakes…Mexican Wedding Cookies….Snowball Cookies…these little guys go by a lot of names, but they’re all the same cookie!   A delicious shortbread type cookie, covered in powdered sugar that just melts in your mouth.  Perfect for the holidays!

Just before the holiday season kicked into full swing, Hamilton Beach sent over the Stack & Snap 10 Cup Food Processor to help my holiday cooking/baking go a little more smoothly…and what was the first thing that I chose to use it for?  The classic Russian Tea Cake recipe! 

So you’re probably not going to believe me but this was the first time I’ve used a food processor…as in ever.  And I have to admit that it was probably one of the easiest things to use…not to mention I’m kicking myself because of all of the years that I’ve made desserts that required chopping/crushing ingredients, I did it by hand…which took forever!  The Stack & Snap chopped everything in about 10 seconds…talk about saving me time!

With these Russian Tea Cakes, I chose to use whole pecans…

Russian Tea Cakes

Course Cookies
Servings 35 cookie balls

Ingredients

  • 1 cup 2 sticks of softened butter
  • 1/2 cup of powdered sugar
  • 1 teaspoon of vanilla extract
  • 2 1/4 cups all purpose flour
  • 3/4 cup pecans finely chopped in food processor
  • 1/4 teaspoon salt
  • extra powdered sugar

Instructions

  1. Heat oven to 400 degrees
  2. In a large bowl, mix together butter, sugar and vanilla. Once mixed, add in flour, chopped pecans and salt. I found it was easier to mix the dough together with my hands. The dough will be on the drier side.
  3. Roll dough into one inch balls and place them evenly spaced (about 1 inch) on a non-greased cookie sheet.
  4. Bake for 9-11 minutes (keep an eye on them, you want them to be set but not browned at all).
  5. Remove sheet and let cookies cool slightly on a wire rack. Once warm, roll them gently in powdered sugar and then allow to cool on wire rack.
  6. Roll cookies in powdered sugar one more time and then serve.

    Hi, I’m Russian and I have no idea what these are, LOL!
    There is no such thing as ‘Russian cookies’ and I have never ever seen/eaten anything like this, hahaha! And ordinary people don’t eat pecans, they are still very new and rare in our stores.
    So, that’s a culinary myth!

      Lol! That’s too funny…I have no idea how they got the name, I just know that’s what I’ve known them to be called since I was little. 🙂 A lot of other recipes use walnuts instead of pecans so it all just comes down to preference.

    chop veggies probably for dinner or make a yummy dessert. I have a mini food processor, not a good sized big one, so this would be awesome!

    This awesome processor would be a wonderful addition to my kitchen. I have loved these cookies ever since I was little. Always a favorite……………they just melt in your mouth.

    I am going to make pie crust and pizza dough. It is so hard to make these by hand and pie crust really mixes good in a food processor!

    I think I might make my own hummus; it just seems like something that would both be much better made fresh than bought from the store and also somethings that you really meed a machine to make.

    I use a pastry blender to make my pie crusts now, but so many people use a food processor instead that I’d love to try it. We have quiche fairly frequently, so it would be a big help.

    I would make chicken croquettes first!! They are one of my favorite appetizers to eat, but it takes me forever to chop up all the chicken!

    I’ve been dying to make my own Almond butter! I hear it’s way cheaper to buy the almonds and do it yourself, and I only have a very small 2 cup food processor.
