My favorite meal has to be breakfast (with the exception of dessert…but I don’t really think that counts as a meal, lol!).  So anytime there is a chance to try something new, I’m game.  Now this recipe isn’t exactly new to my house but I decided to revamp it and switch some things around to be a tad more healthy.

The only catch is, I like things that are healthy but don’t taste healthy…I don’t like sacrificing taste!

So with this Berry Medley French Toast Bake, it’s made with whole wheat bread, egg whites, and instead of regular milk, I decided to whip this batch up with some Silk Cashewmilk.  Now I’ll be honest, when I first heard of Silk Cashewmilk I was a tad skeptical.  I wasn’t sure it would taste good but I was pleasantly surprised.  It’s got a creamy taste and 50% more calcium than milk (exactly what this pregnant lady needs!), not to mention that it really lends itself nicely to replacing regular milk in recipes!

Berry Medley French Toast Bake Recipe - easy and healthy recipe that is sure to please everyone in the family.

Berry Medley French Toast Bake

Ingredients:

  • 7 cups of cubed wheat bread
  • 8 egg whites (it’s a lot easier if you buy a carton of egg whites, just fyi!)
  • 1/3 cup maple syrup
  • 1 1/2 cups of Silk Cashewmilk
  • 2 teaspoons of almond extract
  • 1 teaspoon of vanilla extract
  • 1 teaspoons of ground cinnamon
  • 2 cups of mixed berries (I had to use frozen due to it being out of season, if using frozen, do not thaw berries first!)

Directions:

  1.  In a large bowl, whisk together egg whites, syrup, Silk Cashewmilk, almond + vanilla extracts, and cinnamon.  Set aside.
  2.  Grease a 9×13 baking dish and add in bread cubes.
  3.  Pour your liquid mixture evenly over the bread cubes.  Let it sit for about a half an hour, mixing gently one time to be sure that bread is evenly coated in liquid mixture.  While waiting, preheat your oven to 350.
  4. When the 3o minutes of soaking is up…add in berries.  I found it easier to evenly distribute the berries by hand since mixing tended to break/mash the bread too much.
  5. Pop into the oven for 40-45 minutes or until no liquid remains/it’s all baked into bread.
  6. Allow to cool before serving…and top with little strawberry or blueberry syrup if you’d like.  😉
