Fall.  The time of year where it starts to get chilly and hearty meals is where it’s at!

This time last year, Hamilton Beach reached out to me to share a favorite slow cooker recipe of mine and I shared an amazing Apple Crisp recipe.  So this year when they reached out to me about trying their Programmable Stay of Go 6 Quart Slow Cooker, I decided to switch it up and share a delicious dinner idea: Mississippi Pot Roast!

Straight up – slow cookers are my thing.  Who doesn’t love an appliance that you put food into, leave alone for 8 hours, and magically dinner is ready for you when you check back?!  Well this exact slow cooker has three temperature settings and a timer…a timer!  I’ve never owned one that keeps track of how long it’s been cooking and I know that sounds simple enough to take care of yourself BUT when you are trying to prepare a meal and your baby is crying…sometimes it’s hard to keep track of the starting time.  So this takes care of that.  😉  Also, this cooker’s lid is hinged and locks so it’s easy to transport if you need to take meals to family get togethers/holiday functions.  You can see all of the other features here.

I’m always on the hunt for easy slow cooker recipes…and I mean easy…as in you throw items in and that’s all you do, no extra prepping or adding things in after it’s done!  And of course, recipes that don’t have a ton of ingredients are a major plus too!  If that’s something you and your family appreciate too, I highly recommend giving the Mississippi Pot Roast a try!

Slow Cooker Mississippi Pot Roast

Slow Cooker Mississippi Pot Roast - The most juicy and flavorful roast you'll ever make! Plus it's one of the easiest slow cooker meals to prepare!

Ingredients

  • 3 pound chuck roast
  • 1 package of Au Jus Gravy mix
  • 1 package of powdered ranch salad dressing/seasoning mix
  • 1 stick of unsalted butter
  • 8-10 pepperoncini peppers
  • 1/4 cup pepperoncini juice

Instructions

  1. Put chuck roast into slow cooker.
  2. Empty packets of Au Jus Gravy and ranch dressing mix on top of chuck roast.
  3. Add stick of butter on top of roast.
  4. Place peppers on top and around roast and then pour juice over roast.
  5. Set slow cooker on low and cook for 8 hours.

    Creamy Italian Chicken is one of my favorite crock pot meals – it’s not the healthiest, but it is easy. Chicken, good seasons, cream of chicken soup, and cream cheese. It’s so tasty, especially over white rice!

    This looks amazing!!!! My favorite crock pot recipe is pork with cornbread stuffing and cranberry. It’s a pack of cornbread stuffing mix, some pork chops, a cubed up apple, some onion, and season-all. It’s the perfect cold day meal. Our slow cooker dates back to the 80’s or so.

    I like to put Pre-seasoned Fajita Chicken Thighs in the crockpot and squirt Sriracha Sauce over the top of them and cook on high about 6 hrs. Tastes great, and easy to make.

    I love making homemade chili in the slow cooker, perfect with some warm honey cornbread in this cold weather! I also love making pot roast with fresh carrots, and the broth makes an amazing gravy.

    I especailly love making homemade clam chowder and homemade chili in a slow cooker. Not only does it taste awesome but my house smells wonderful after cooking with it for hours. Slow cookers are great to use for meals for any size of a family. I will have to try your Mississippi Pot Roast, it looks delicious!

    Ooh, I will have to try this one! My husband loves pepperoncini peppers! I make roast the most often in my slow cooker (that is old and needs an upgrade…wink wink) because it is so versatile for many different meals.

    I am such a sucker for crock pot meals! Anything from pork tenderloin and veggies to soups and pasta’s!! I am a stay at home mom to 8 kids and my amazing husband works long hours, so using my crock pot is a must; most days just to keep my sanity and be able to cook supper and spend my time with my kiddos!!

    I love making shredded chicken taco meat in the crock pot! I toss in frozen chicken breasts and add homemade taco seasoning, black beans and pinto beans, chopped black olives, chopped onion and minced garlic. It is so yummy on tacos and nachos!
