Crunchy and Chewy Chocolate Chip Cookies
**Today, I’m publishing yet another yummy recipe from my short lived food blog, The Hangry Baker. 😉
These are the perfect cookies for when you’re craving a cookie that’s not a solid crunchy cookie…but not a cakey cookie either. They have the perfect amount of crunch but are chewy at the same time. Perfection!
My 4 year old told me they would probably be Cookie Monster’s favorite cookie. 😉
And you’d never guess what’s in them that adds to the chewiness…
Shhh…between you and me…the secret ingredient to these cookies is cornflakes!
Yep, good old fashioned cornflakes. Lol! Who would have thought?!
So if you’re ready to binge on some delicious cookies…here’s the recipe:
Crunchy and Chewy Chocolate Chip Cookies
Ingredients
- 2 cups of all purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 cup crushed cornflakes
- 1 cup butter softened
- 1 cup sugar
- 1/2 cup packed brown sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 1 cup semi sweet chocolate chips
Instructions
- Preheat oven to 350.
- In a medium bowl, mix together flour, salt and baking soda. Then add/mix in cornflake crumbs. Set aside.
- In a large bowl, beat softened butter, sugar and brown sugar together until light and fluffy. Then, mix in vanilla and eggs. Finally, add in dry ingredients until mixed completely.
- Stir in semi sweet chocolate chips.
- Drop tablespoon size dollop of batter (don't be tempted to go larger...these cookies spread out!) onto an ungreased cookie sheet (these are my favorite cookie sheets that never burn the bottoms).
- Bake for 12-14 minutes or until lightly browned.
- Cool for 2 minutes on cookie sheet and then moved to a wire rack to finish cooling.
