With summer now in full swing, I find that our little family has been spending a lot of time outdoors, playing hard and constantly on the go! I know it’s easy to grab quick snacks that might not be terribly healthy, so I’ve found a great way to sneak in some healthy options for my family. We use Silk Almondmilk Protein+Fiber in our cereals for breakfast (you can’t tell the difference between regular milk in your cereal!) and I’ve been obsessed with creating smoothies with almond milk!
I was playing around in the kitchen the other day bound and determined to create something tasty and refreshing…and something that Mabel would drink too…that’s the main challenge since she’s Miss Picky!
So I decided to combine some Silk Almond Coconut Blend with fresh strawberries, pineapple, ice and a bit of coconut:
All combined with a cute little straw and some fruit garnishes, this is what I got:
I thought it was the perfect combination of light fruit flavors and a healthy flair.
The true test was going to be whether or not Mabel (Miss Picky) would drink it or not:
Now of course she didn’t get the fancy glass because we all know a 2 year old would either drop it or throw it…but I gave her some of the smoother in her little cup….drum roll…she drank it and wanted more!
Ingredients
- 1 cup fresh pineapple
- 2 tablespoons of pineapple juice
- 2/3 cup strawberries
- 1 cup Silk Almond Coconut Blend Milk
- 1/2 cup ice
- 1/4 teaspoon coconut extract
- 1 tablespoon of unsweetened coconut flakes (optional)
Directions
- In a blender, add all ingredients and blend until smooth.
- Pour into a glass, garnish with fruit and a few extra coconut flakes, and drink in all the summery goodness! 😉
I purchase all of my Silk Almondmilk at Safeway (the only place that I’ll shop here in Delaware!) since I love how clean they keep the store. Plus it’s super easy to find all of the varieties of Silk:

Wow, this smoothie looks so refreshing! It sounds so tropical and amazing…now if only it had a beach to go with it. Time to stock up on some more Silk! #client
